Do you have the passion to create artisanal breads, gourmet pastries and beautiful decorative showpieces?
In this course, you will be trained to produce a range of artisanal and decorative breads, yeast-raised pastries, decorative showpieces, confectionery and contemporary-plated desserts. It also provides you with the knowledge on food nutrition, sensory analytics and pastry menu creation.
This course also includes a six-month enhanced internship at one of the renowned Pastry and Bakery establishments that ITE partners with.
What you'll learn
Prepare mise en place for pastry and baking products
Process basic baking ingredients
Produce a range of artisan and decorative breads
Produce a range of yeast-raised pastry products
Produce a range of entremets
Prepare a range of chocolate and sugar displays/decorations
Design contemporary plated desserts
Analyse pastry and baking products
Create menu and recipes

Entry requirements
Nitec GPA:
Nitec in Pastry & Baking with minimum GPA of 2.8 (inclusive of CCA bonus points)
Notes:
Applicants will have to pass a prescribed medical examination.
Students will be required to purchase a laptop for the course. This is in addition to the course fees. Financial assistance is available to eligible students under ITE Opportunity Fund subject to terms and conditions.
