Do you have the passion to create artisanal breads, gourmet pastries and beautiful decorative showpieces?

In this course, you will be trained to produce a range of artisanal and decorative breads, yeast-raised pastries, decorative showpieces, confectionery and contemporary-plated desserts. It also provides you with the knowledge on food nutrition, sensory analytics and pastry menu creation.

This course also includes a six-month enhanced internship at one of the renowned Pastry and Bakery establishments that ITE partners with.

What you'll learn

  • Prepare mise en place for pastry and baking products
  • Process basic baking ingredients
  • Produce a range of artisan and decorative breads
  • Produce a range of yeast-raised pastry products
  • Produce a range of entremets
  • Prepare a range of chocolate and sugar displays/decorations
  • Design contemporary plated desserts
  • Analyse pastry and baking products
  • Create menu and recipes

Entry Requirements

Nitec GPA:
Nitec in Pastry & Baking with minimum GPA of 2.8 (inclusive of CCA bonus points)

  • Applicants must undergo an admission interview.
  • Applicants may need to pass a pre-admission medical examination as advised by ITE College West. For more information, please contact ITE College West.
